Mountain Man Skillet

The Scoop

Sausage, crispy potatoes, fluffy eggs, and a blanket of melted cheddar, this breakfast skillet does not believe in small portions.
Everything gets cooked in one skillet until the potatoes are golden and the cheese is gloriously melty, making it exactly the kind of hearty breakfast that earns its name.
Hack it:
Swap the sausage for bacon, ham, chorizo, or turkey sausage.
Add bell peppers, onions, mushrooms, spinach, or jalapeños for extra flavor and color.
Season with smoked paprika, garlic powder, black pepper, or Cajun seasoning.
Top with salsa, hot sauce, avocado, sour cream, or sliced green onions.
Use sweet potatoes instead of regular potatoes for a slightly sweeter twist.
Leftovers:
Stuff into breakfast burritos with salsa and extra cheese.
Turn into crispy breakfast tacos with avocado and hot sauce.
Fold into quesadillas for an easy second-day meal.
Crisp leftovers in a skillet and serve with a fried egg.
Pile onto toasted bread with hot sauce for a seriously loaded breakfast sandwich.
