- 1/2 cup apple cider or apple juice
- 1 tablespoon cornstarch
- 6 cups Honeycrisp apples peeled and thinly sliced
- 1/3 cup light brown sugar packed
- 1 tablespoon fresh lemon juice
- 1 1/4 teaspoons ground cinnamon divided
- 1/8 teaspoon kosher salt
- 1/4 cup unsalted butter melted
- 1 sleeve buttery round crackers crushed
- 1 cup sharp or mild cheddar cheese shredded
Directions
- Preheat the oven to 350 degrees F.
- Coat an 11x7-inch baking dish with cooking spray.
- In a mixing bowl, whisk the apple cider and the cornstarch together.
- In a large skillet over medium heat, add the apples, the brown sugar, the lemon juice, 1 teaspoon of the cinnamon, and the salt and cook, stirring occasionally, until the apples release their liquid and start to soften, about 5-6 minutes.
- Stir the cornstarch mixture into the apple mixture and cook until it has thickened and is glossy, about 2-3 minutes.
- Pour the apple mixture into the prepared baking dish.
- In a medium bowl, add the butter and the remaining cinnamon and mix together.
- Add the crushed crackers to the cinnamon-butter and toss to combine.
