Oven-Time Nachos take snacking to a whole new level. Crisp tortilla chips are layered and baked with flavorfully robust black beans, an abundance of cheddar cheese, refreshing pico de gallo, sassy scallions, then topped with pickled jalapeños, creamy Greek yogurt, and tasty guacamole for nacho grandness! Ingredients
For the nachos:
- 1 tablespoon olive oil
- 1/2 medium red onion diced
- 2 cloves garlic minced
- 1 teaspoon ground cumin
- 1/2 teaspoon chili powder
- 1/2 teaspoon kosher salt
- 2 (15-ounce) cans black beans drained and rinsed
- 1/2 cup water
- 1 (8-ounce) bag tortilla chips
- 2 cups cheddar cheese or Monterey Jack cheese grated
- 1 cup refrigerated pico de gallo
- 3 medium scallions green parts only, thinly sliced
For topping:
- 1 medium scallion green parts only, thinly sliced
- 1/2 cup pickled jalapeños
- 1 cup plain Greek yogurt
- 1 cup guacamole homemade or store-bought
Directions
- Move an oven rack to the middle position.
- Preheat the oven to 400 degrees F.
- Line an 18x26-inch rimmed baking sheet with parchment paper.
- In a large saucepan over medium heat, add the olive oil until shimmering.
- Add the onions, the garlic, the cumin, the chili powder, and the salt to the hot oil and cook, while stirring, until the onions are soft, about 5 minutes.
- In a large bowl with a fork, add the black beans and mash them until they are smooth with some chunks remaining.
- Add the mashed black beans and the water to the onion mixture and cook, while stirring occasionally, until the mixture is thickened, about 5 minutes.
- Transfer the black bean mixture from the stovetop to a wire rack.
- On the prepared baking sheet, in a single layer evenly spread about 1/2 of the tortilla chips.
- Evenly dollop about 1/2 of the black bean mixture on top of the chips and sprinkle about 1/2 of the cheddar cheese on top.
- Evenly top the cheese-bean mixture with 1/2 of the pico de gallo and about 1/2 of the scallions.
- Repeat the layers with the remaining tortilla chips, the remaining black bean mixture, the remaining cheddar cheese, and the remaining pico de gallo.
- Transfer the nachos to the oven and bake until the cheese is melted and bubbling, about 5 minutes.
- Transfer the nachos from the oven to a wire rack.
- Top the nachos with the remaining scallions, the pickled jalapeños, the Greek yogurt, and the guacamole.
- Serve immediately.
