The Scoop

Breakfast came to the party with crispy hash browns, smoky bacon, melty cheddar, and a whole can of green chiles.
This hearty casserole bakes everything together with perfectly set eggs for a spicy, cheesy start to the day that definitely does more than coffee.
Hack it:
Add chorizo, breakfast sausage, or black beans for a heartier filling.
Swap cheddar for Pepper Jack or Monterey Jack for extra melt and heat.
Add diced bell peppers, corn, or sautéed spinach to the hash brown layer.
Stir cumin, smoked paprika, or chili powder into the potatoes.
Top with avocado, salsa, pico de gallo, cilantro, or sliced jalapeños.
Serve with warm tortillas and a spoonful of sour cream for a full breakfast spread.
Leftovers:
Stuff slices into tortillas with salsa and avocado for breakfast burritos.
Chop the casserole into a skillet with extra potatoes and crisp everything up for a breakfast hash.
Turn leftovers into cheesy breakfast quesadillas with salsa for dipping.
Layer chunks into nachos with black beans, jalapeños, and extra cheese.
Serve a slice over greens with avocado and salsa for a quick breakfast bowl.
