Recipe Background
Sigh of Relief Casserole: comforting, quick family meal with a newborn.
The first meal with a newborn in the house is memorable not just for the food, but the dizzying mix of exhaustion and joy. There I was, cradling my tiny daughter in one arm, trying to decipher the mystery that was her gurgles, while my other hand instinctively reached for the pantry. I spotted the jar of marinara sauce, practically a staple since my college days, and knew something comforting could be whipped up while navigating the unpredictable newborn schedule. Having a stash of leftover cooked chicken and the basics always at hand, I knew exactly what to do.
This casserole became our first family dinner—a teetering tower of pasta, cheese, and chicken, held together with that bold marinara. A sigh of relief, both literally and figuratively, washed over me as we sat down to eat. A quick tip for any sleep-deprived new parents: drain the pasta well to keep the casserole from getting too soggy. Even newborns need a little nap time for clean slices. I topped it off with mozzarella, and we all shared a moment of calm, savoring what felt like the first intentional meal in ages. Sometimes, it’s these simple, heartwarming dishes that mark the transition into new family traditions, one melted cheesy bite at a time.
