All layered on a crushed cracker crust, cooked rice, seasoned ground beef, and a creamy cheese sauce come together to create the most delicious base to ever be. Then, it all gets topped with shredded lettuce, sharp cheddar cheese, plump tomatoes, and pimiento-stuffed olives, to either be served alone or with crunchy tortilla chips. Stack Supper makes suppertime, no matter the occasion, just the best time!

Ingredients

For the supper:

  • 1 3/4 cups saltine crackers crushed
  • 2 cups rice cooked
  • 3 pounds ground beef
  • 1 large onion chopped
  • 1 1/2 cups tomato juice
  • 3/4 cup water
  • 3 tablespoons taco seasoning
  • seasoned salt to taste
  • salt to taste
  • black pepper to taste
  • 1/2 cup butter cubed
  • 1/2 cup all-purpose flour
  • 4 cups whole milk
  • 1 pound processed cheese such as Velveeta®, cubed

For serving:

  • 4 cups lettuce shredded
  • 3 cups sharp cheddar cheese shredded
  • 3 medium tomatoes diced
  • 1 (10-ounce) jar pimiento-stuffed olives sliced
  • 1 (14.5-ounce) package tortilla chips

Directions

  • Evenly divide the crushed saltines between two ungreased 9x13-inch baking dishes. Then, evenly top with the cooked rice.
  • In a large skillet over medium-high heat, add the ground beef and the onion and cook, while crumbling the meat, until the beef is no longer pink, about 5-7 minutes.
  • Drain and discard the excess grease, then return the beef-onion mixture back to the skillet.
  • Add the tomato juice, the water, the taco seasoning, the seasoned salt, the salt, and the black pepper to the beef-onion mixture and simmer, stirring occasionally, about 15-20 minutes.
  • Evenly spoon the beef mixture over the cooked rice.
  • In a large saucepan over medium heat, melt the butter.
  • Add the flour to the melted butter and cook, stirring occasionally, until smooth.
  • Gradually add the milk to the butter mixture and stir to combine.
  • Bring the sauce mixture to a boil and cook until thickened, about 2 minutes.
  • Reduce the heat to low, then add the processed cheese to the sauce mixture. Cook, while stirring, until it has melted.
  • Evenly pour the sauce over the beef mixture.
  • Evenly sprinkle the lettuce, the cheddar cheese, the tomatoes, and the olives over the beef supper.
  • Serve the beef supper with the tortilla chips.
