The first parent-teacher conference of my son’s kindergarten year called for a bit of bribery. Armed with a pantry stocked with the usual suspects like all-purpose flour and baking powder, along with apples and walnuts waiting patiently for their time to shine, I got to work. I always have brown sugar on hand, perfect for giving these squares their depth, and a dash of vanilla extract to wrap it all together.
The apple and walnut combo was inspired by a visit to an orchard during our family trip last fall. Ingredients
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 2 1/4 teaspoons ground cinnamon divided
- 1/2 cup plus 2 tablespoons white sugar divided
- 1/4 cup unsalted butter melted
- 1/2 cup brown sugar packed
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 cup apple chopped
- 1/2 cup walnuts finely chopped
Directions
- Preheat the oven to 350 degrees F.
- Grease a 9-inch square pan.
- Sift the flour, the baking powder, the salt, and 1/4 teaspoon of the cinnamon into a medium bowl.
- Stir 2 tablespoons of the white sugar and the remaining cinnamon together in a small bowl.
- Mix the melted butter, the brown sugar, and the remaining white sugar together in a large bowl with a wooden spoon until smooth.
- Stir the egg and the vanilla into the butter mixture.
- Blend the flour mixture into the butter mixture until just combined.
- Stir the apple and the walnuts into the batter.
- Evenly spread the batter into the prepared pan and sprinkle the cinnamon-sugar mixture over top.
- Bake the bars until the top springs back when lightly pressed, about 25-30 minutes.
- Let the bars cool completely in the pan.
- Cut the bars into squares and serve.
