Ingredients

  • 1 (8-ounce) package penne pasta
  • 1 tablespoon basil oil
  • 1 tablespoon olive oil
  • 3 cloves garlic, minced
  • 1 pint grape tomatoes, halved
  • 1 cup Pepper Jack cheese, shredded
  • 1 cup mozzarella cheese, shredded
  • 1/4 cup parmesan cheese, grated
  • 1 tablespoon fresh basil, minced

Directions

  • In a large pot of boiling water, cook the pasta to al dente, according to the package directions. Drain the pasta.
  • Heat the basil oil and the olive oil in a large skillet over medium-high heat.
  • Add the garlic to the skillet and cook until it is soft, about 1-2 minutes.
  • Add the tomatoes to the garlic, reduce the heat to medium, and simmer the tomato mixture for 10 minutes.
  • Stir the Pepper Jack cheese, the mozzarella cheese, and the parmesan cheese into the tomato mixture.
  • Once the cheese begins to melt, add the cooked penne pasta to the tomato mixture and stir to combine.
  • Sprinkle the fresh basil over the pasta.
  • Serve.
