Ingredients

  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 cup ham, cooked and diced

  • kosher salt, to taste
  • freshly ground black pepper, to taste
  • 2 green onions, thinly sliced
  • 4 (4-inch) whole-wheat tortillas
  • 1/2 cup reduced-fat cheddar cheese, shredded

Directions

  • Preheat the oven to 400 degrees F.
  • Line a baking sheet with parchment paper.
  • In a large skillet over medium-high heat, heat the oil.
  • Add the garlic to the oil and cook, stirring frequently, until it is fragrant, about 1 minute.
  • Stir the ham and the broccoli into the garlic and cook until the broccoli is tender and bright green, about 3-4 minutes.
  • Add the eggs to the ham mixture and cook, while stirring with a heat-proof spatula, until the eggs just begin to set.
  • Season the egg mixture with the salt and the pepper and cook until it has thickened and there is no visible liquid egg remaining, about 3-5 minutes.
  • Stir the green onions into the egg mixture.
  • Evenly divide the egg mixture amongst one side of each of the tortillas.
  • Evenly divide the cheese and sprinkle it atop the egg mixture on each of the tortillas.
  • Fold the tortillas in half and place them on the prepared baking sheet.
  • Bake the breakfast quesadillas until the cheese has melted, about 5-6 minutes.
  • Serve.
