The Scoop

Tacos without the tortilla? Absolutely!
Walking Tacos take all the best taco-night ingredients: seasoned beef, chili beans, crunchy corn chips, and plenty of melted cheese, and turn them into one gloriously messy bake. Finish it with crisp lettuce, juicy tomatoes, creamy avocado, and sour cream, then grab a fork and dig in. No plate of perfectly assembled tacos is required.
Hack it:
Switch the protein: Use ground turkey, chicken, pork, shredded chicken, or plant-based mince instead of beef.
Load up the vegetables: Add corn, bell peppers, zucchini, or finely chopped mushrooms to the beef mixture.
Make it smoky: Add smoked paprika and a pinch of cumin to the taco seasoning for deeper flavor.
Turn it into individual Walking Tacos: Divide the hot filling between individual bags of corn chips, then add cheese and toppings directly into each bag. Grab a fork and walk away with dinner.
Use the air fryer: Reheat individual portions until hot and crisp, then pile on the fresh toppings just before serving.
Leftovers:
Walking Taco Bowls: Spoon the leftover filling over rice with lettuce, tomatoes, avocado, cheese, and a squeeze of lime.
Loaded Nachos: Spread tortilla chips on a baking sheet, top with the leftover beef mixture and cheese, and bake until bubbling.
Stuffed Peppers: Fill halved bell peppers with the taco mixture, top with cheese, and bake until tender.
