Wife's Delight

The Scoop

Think of this as lasagna's laid-back cousin.
Layers of tender egg noodles, saucy ground beef, tangy sour cream, and plenty of melted cheese come together in a no-fuss casserole that's pure comfort from the first scoop to the last.
Hack it:
Add Italian sausage alongside the beef for extra flavor.
Stir sautéed mushrooms, spinach, or bell peppers into the meat sauce.
Add red pepper flakes or Calabrian chiles for a little heat.
Stir Parmesan or Italian herbs into the sour cream layer.
Finish with fresh basil or parsley for a fresh pop against all that cheesy richness.
Leftovers:
Crisp slices in a skillet until the edges are golden and serve with a fried egg.
Turn leftovers into stuffed bell peppers topped with extra cheese.
Chop the casserole and fold it into a cheesy quesadilla.
Layer portions with extra sauce and cheese, then bake into mini pasta pies.

  • Spread 1/3 of the meat mixture on top of the noodles.
