Earlier that morning, I crushed vanilla wafers in the food processor, my mind skipping back to my own school days when Mom would pack an extra cookie in my lunchbox. These simple wafers, now the base for our celebratory treat, brought with them a sense of nostalgia and warmth to match the moment.
As the twins animatedly recounted lunchtime tales, I mixed the cream cheese, sugar, eggs, and vanilla with our ancient electric mixer. It had been through many a birthday cake and a few Thanksgiving mishaps but remained trusty. The trick to this recipe is in making the cream cheese mixture just right—smooth and fluffy without going overboard. Once baked, letting them cool properly ensures they set to perfection. Ingredients

  • 1 (12-ounce) package vanilla wafers
  • 2 (8-ounce) packages cream cheese room temperature
  • 3/4 cup granulated sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 (21-ounce) can cherry pie filling optional, for topping

Directions

  • Preheat the oven to 350 degrees F.
  • Line the cups of a miniature muffin pan with paper liners.
  • In the container of a food processor, add the vanilla wafers and process until crushed.
  • In the bottom of each of the liners, add about 1/2 teaspoon of the crushed vanilla wafers.
  • In large bowl with an electric mixer on medium-high speed, add the cream cheese, the granulated sugar, the eggs, and the vanilla extract and beat until light and fluffy.
  • Leaving a little space just at the top of the paper liners, evenly add the cream cheese mixture on top of the crushed vanilla wafer layer in each muffin well. Make sure to smooth out the tops.
  • Bake the bites for 15 minutes.
  • Transfer the bites from the oven to a wire rack and let them cool until they are set, about 1 hour.
  • Serve topped with the cherry pie filling.
