The Scoop

Roast beef, rich gravy, creamy mashed potatoes, and bread walk into a dinner plate and absolutely commit to comfort food.
This old-school favorite turns leftover roast beef into a hearty open-faced sandwich layered with tender onions, savory brown gravy, and buttery mash. Simple, nostalgic, and unapologetically cozy.
Hack it:
Add mushrooms, caramelized onions, or sautéed peppers to the beef and gravy.
Swap the roast beef for leftover pot roast, brisket, or shredded steak.
Stir Worcestershire, Dijon, or a splash of red wine into the gravy for extra depth.
Make the mash extra good with roasted garlic, Parmesan, chives, or sharp cheddar.
Use sourdough, Texas toast, rye, or garlic bread instead of white bread.
Leftovers:
Turn the beef and gravy into a loaded baked potato topping.
Spoon everything over fries or crispy tater tots for loaded beef-and-gravy fries.
Fold the beef into scrambled eggs with crispy potatoes for a hearty breakfast hash.
Use the beef and mash as a filling for savory hand pies.
Toss the shredded beef and gravy with egg noodles for a quick beef stroganoff-style dinner.

Ingredients

  • 1 large onion, sliced
  • 3 tablespoons butter, divided
  • 2 cups roast beef, leftover and shredded
  • 1 (12-ounce) jar brown gravy
  • 2 medium potatoes, cut up
  • milk or half-and-half, to taste
  • salt, to taste
  • pepper, to taste
  • 2-4 slices white bread

Directions

  • In a large skillet, over low heat, sauté the onions in 1 tablespoon of the butter until tender, about 10-15 minutes.
  • Stir the cooked beef into the onions and cover, letting it simmer, about 5-7 minutes.
  • Add the gravy to the meat mixture and mix thoroughly.
  • While the meat mixture is cooking, boil the potatoes, covered, in salted water, about 10-15 minutes.
  • Drain the water from the potatoes.
  • Mash the potatoes.
  • Stir the remaining butter and the milk into the potatoes, ensuring it is well blended and no lumps remain.
  • Season the mashed potatoes to taste with the salt and the pepper.
  • To plate, place 1 slice of the bread. Spoon the meat mixture over the bread and cover with the second slice. Add a spoonful of the mashed potatoes on top of the second piece of bread. Cover with more of the meat mixture, to taste.
  • Serve.
