You need more than just eggs; you need eggs that are fluffy, creamy, and loaded with succulent bacon, bright tomatoes, and melty mozzarella. It's light and refreshing, yet hearty and fulfilling all at once! Get ready to find time to brunch any time of day with this Brunchy Bake!
Ingredients
- 4 thick-cut slices bacon coarsely chopped
- 1 cup sweet onion minced
- 10 baby bell peppers assorted colors, thinly sliced
- 2 cloves garlic minced
- 2 (12-ounce) cans evaporated milk
- 8 large eggs lightly beaten
- 1/2 cup butter melted
- 1/4 cup all-purpose flour
- 1 teaspoon kosher salt
- freshly ground black pepper to taste
- 1 (8-ounce) bag salted pita chips slightly crushed
- 2 large tomatoes coarsely chopped
- 1/2 cup fresh basil sliced, plus more, to taste, for garnish
- 1 (8-ounce) block mozzarella cubed
- grape tomatoes optional, to taste, halved, for topping
Directions
- Lightly grease a 6-quart slow cooker with cooking spray.
- Cook the bacon in a medium skillet until crisp, about 8-10 minutes.
- Transfer the bacon to a paper-towel-lined plate.
- Drain all but 2 tablespoons of the bacon drippings from the skillet, reserving the rest in the pan.
- Add the onions to the reserved bacon drippings and sauté over medium heat until translucent, about 3 minutes.
- Add the bell peppers and sauté until tender, about 3-4 minutes.
- Add the garlic and cook until fragrant, about 1-2 minutes.
- Transfer the skillet from the heat.
- Whisk together the evaporated milk, the eggs, the melted butter, the flour, the salt, and the black pepper in a large bowl until frothy.
- Layer the pita chips, the chopped tomatoes, the bell pepper mixture, the egg mixture, 1/2 cup of the basil, the mozzarella, and the bacon into the slow cooker.
- Cover with a lid and cook the mixture on low until heated through and melted, about 4 hours.
- Uncover and cook for 30 minutes.
- Top with the extra basil and the grape tomatoes and serve.
