Ingredients

For the ranchero meal:

  • 1 1/2 pounds ground beef
  • 1 (28-ounce) can baked beans
  • 1 (11-ounce) can whole kernel corn drained
  • 1/4 cup barbecue sauce
  • 2 tablespoons ketchup
  • 1 tablespoon prepared mustard
  • 3/4 cup cheddar cheese shredded

Optional, for serving:

  • sour cream to taste
  • green onions to taste, sliced
  • 7 cups tortilla chips

Directions

  • In a large skillet over medium heat, add the ground beef and cook, while crumbling, until it is no longer pink, about 5-7 minutes.
  • Drain the excess grease from the skillet.
  • Add the baked beans, the corn, the barbecue sauce, the ketchup, and the mustard to the ground beef and stir to combine.
  • Cook the beef mixture until heated through.
  • Sprinkle the beef mixture with the cheese and cook it until melted.
  • Top the beef mixture with the sour cream and the green onions.
  • Serve with the tortilla chips.
