Moving to a new place is daunting, but hosting family dinner abroad adds a whole new layer of adventure. It all began during my stint in Lisbon where years ago, I landed a research opportunity. Craving comfort from home, I decided to whip up a casserole—an homage to my mom’s classic, except with a playful twist. Picture my tiny kitchen with sporadic pops of chive cream cheese and the hum of an electric mixer. Portuguese supermarkets, unfamiliar yet intriguing, offered a treasure trove of substitutes, but finding chicken soup required a scavenger hunt worthy of any avid traveler.
As I invited my new housemates from across Europe, I wanted a taste of the American heartland on our eclectic table. Shredded chicken from the local market, a can of sweet corn, and surprisingly, Mexican cheese blend became the foundation. For the pièce de résistance, a tower of cheesy tortilla chips stood proudly on top—an ode to game nights back home. The casserole bubbling under a crumbled blanket of Doritos was a sight to remember. A sprinkle of green onions added the finishing touch, setting off a visual fiesta.
One essential tip I picked up is not to rush the melting; give the cheese time to turn golden. Letting the dish rest for ten minutes allowed the layers to settle, offering clean slices full of nostalgia and new beginnings. This meeting was my first true family dinner away from home. It was more than a meal—it was a mix of cultures and flavors under one European roof.

Ingredients

  • 1 (8-ounce) container chive cream cheese
  • 1 (10.5-ounce) can condensed cream of chicken soup
  • 1 bunch green onions chopped, divided
  • 3 cups chicken cooked and shredded
  • 1 (8.75-ounce) can corn
  • 3 cups shredded Mexican cheese blend
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 teaspoon garlic powder
  • 3 cups Doritos or cheesy tortilla chips crumbled

Directions

  • Preheat the oven to 400 degrees F.
  • Dump the cream cheese and the chicken soup into a large mixing bowl and mix together with an electric mixer until smooth.
  • Set aside 1/4 cup of the chopped green onions and add the remaining green onions to the mixing bowl.
  • Add the shredded chicken, the drained corn, 2 cups of the shredded Mexican cheese blend, the salt, the pepper, and the garlic powder to the bowl.
  • Stir together until fully combined.
  • Pour the mixture into a greased 9x13-inch baking dish and spread it out evenly.
  • Sprinkle the crumbled Doritos on top.
  • Sprinkle the remaining Mexican cheese blend and 1/4 cup of the chopped green onions on top of the Doritos layer.
  • Place the dish in the oven and bake until the cheese on top is starting to brown, about 17-20 minutes.
  • Serve and enjoy!
