Ingredients

  • 4 medium Yukon gold potatoes thinly sliced
  • 8 ounces ham cooked and cubed
  • 1 medium green sweet pepper chopped
  • 1 small sweet yellow onion chopped
  • 1 cup Colby and Monterey Jack cheese shredded and mixed

Directions

  • Preheat the oven to 350 degrees F.
  • Grease a 2-quart baking dish.
  • Layer 1/2 of the potatoes, 1/2 of the ham, 1/2 of the green pepper, 1/2 of the onion, and 1/2 of the cheese in that order in the prepared baking dish.
  • Layer on the remaining ham, the remaining sweet pepper, and the remaining onion in the baking dish.
  • Top the casserole with the remaining potatoes in an even layer.
  • Cover the casserole and bake for 45 minutes.
  • Uncover and continue baking until the potatoes are tender, about 15 minutes.
  • Sprinkle the remaining cheese on top of the casserole and bake until melted, about 5 minutes.
  • Serve hot.
