The Scoop

Dutch Oven Chicken Bog combines comfort and ease with rotisserie chicken in a new home setting.
I remember the comfort of my first moving-day meal vividly. Amid stacks of boxes and bubble wrap, I wanted something easy yet reassuring, so I turned to the humble Dutch Oven Chicken Bog. The kitchen was the last room to unpack, but I always kept my Dutch oven handy, knowing it would come to the rescue. A can of stock and some garlic cloves from an overfilled tote bag were just the beginning. I warmed olive oil, feeling the sizzle of promise as chopped onions and carrots took on that irresistible sweetness. It was just the welcome I needed.
Sifting through the chaos, I found a forgotten parmesan rind. Into the pot it went, lending its umami magic as the long-grain rice toasted. Life was a tad chaotic, like the whirl of rice and chicken stock, but in the mess, there was assurance. Adding rotisserie chicken felt almost poetic, pulling everything together. A splash of lemon juice later, the kitchen filled with a smell so comforting that it felt like home already. As boxes remained unpacked, I made a small note to always let the dish rest a few minutes. It allowed all the flavors—fresh parsley and shaved Parmesan—to mingle perfectly, offering solace in every bite.
One bite of this dish imprinted on my heart. The kitchen was barely set up, and I hadn’t unpacked my favorite spatula, but this Chicken Bog was a welcome of sorts into a new life chapter. Each spoonful reminded me that home isn’t about having everything in the right place but about feeling settled. A new apartment, a warm meal, and the promise of adventures yet to come.

Ingredients

  • 2 tablespoons olive oil
  • 1 cup yellow onion, chopped
  • 1 cup carrots, chopped
  • 2 teaspoons garlic, chopped
  • 1 1/2 cups long-grain white rice
  • 1 teaspoon kosher salt
  • 3/4 teaspoon black pepper
  • 4 cups chicken stock
  • 1 (4-inch) piece parmesan cheese rind
  • 4 cups rotisserie chicken, boneless and skinless, cooked and shredded
  • 3 tablespoons fresh flat-leaf parsley, chopped
  • 1 tablespoon fresh lemon juice
  • 1/3 cup parmesan cheese, shaved

Directions

  • In a large Dutch oven over medium-high heat, add the olive oil.
  • Add the onion and the carrots to the heated olive oil and cook, while stirring occasionally, until the vegetable mixture begins to soften, about 4 minutes.
  • Add the garlic, the rice, the salt, and the black pepper to the vegetable mixture and cook, while stirring continually, until fragrant and the rice begins to toast, about 3 minutes.
  • Add the chicken stock and the parmesan rind to the rice mixture and stir to combine.
  • Bring the rice mixture to a boil.
  • Reduce the stovetop heat to low and cover the pot.
  • Simmer the rice mixture until the rice is just cooked through, about 18 minutes.
  • Uncover the rice mixture and remove and discard the parmesan rind.
  • Add the rotisserie chicken to the rice mixture and cook, while stirring to combine, until the chicken is heated through, about 5 minutes.
  • Transfer the chicken mixture from the stovetop to a wire rack.
  • Add the parsley and the lemon juice and stir to combine.
  • Serve topped with the shaved parmesan cheese.
