The Scoop

French onion soup got a chicken dinner upgrade.
Juicy chicken breasts get coated in garlicky mayo, rolled in savory French onion breadcrumbs, and baked until golden and crisp.
It’s ridiculously simple, packed with oniony flavor, and proof that a few pantry staples can do some serious heavy lifting.
Hack it:
Add grated Parmesan or Gruyère to the breadcrumb coating for extra cheesiness. • Stir Dijon mustard into the mayo for a sharper, more savory kick.
Swap the chicken breasts for boneless chicken thighs for a juicier result.
Add smoked paprika, black pepper, or cayenne to the crumb mixture for extra depth.
Mix finely chopped parsley, thyme, or chives into the breadcrumbs for a fresh, herby finish.
Leftovers:
Slice the chicken into a French onion chicken sandwich with melted Swiss or Gruyère.
Chop it up and toss with pasta, caramelized onions, and a creamy sauce.
Turn it into a loaded salad with crisp greens, apples, walnuts, and a Dijon dressing.
Stuff slices into a toasted wrap with lettuce, cheese, and caramelized onions.
