This giant sugar cookie is masquerading as a pizza…
And it is pure nostalgic bliss, a maximum crowd-pleaser energy for summer hangouts or low-effort dinner parties. Baking a soft, chewy cookie base, slathering it with a silky vanilla-cream cheese spread, and artfully shingling colorful fresh fruit on top is the ultimate low-effort, high-aesthetic flex. It’s sweet, bright, visually stunning, and lets you play food artist without dealing with fussy pastry dough or delicate cake layers.
Hack it: Whisk together 1/4 cup of apricot preserves with a tablespoon of warm water, then gently brush it over the arranged fruit for a glossy, bakery-style finish that keeps the fruit fresh longer.Skip making the cookie dough from scratch completely; grab a tube of store-bought refrigerated sugar cookie dough, press it into your pan, and bake according to package directions to shave off prep time.Add 1 teaspoon of fresh lemon zest and a tiny drop of almond extract to the cream cheese mixture to cut through the sweetness with a bright, aromatic punch.Melt 1/4 cup of dark or white chocolate chips and drizzle it over the berries right before serving for a rich contrast against the tangy cream cheese.
Leftovers: Fruit Pizza Parfait: Chunk up cold leftover slices and layer them in a glass with Greek yogurt and extra toasted nuts for an elite morning breakfast bowl.Frozen Cookie Ice Cream Sandwiches: Cut two small leftover slices (sans fruit), sandwich a scoop of vanilla bean ice cream between them, and freeze for 2 hours for an instant frozen treat.Dessert Toast Crunch: Toast a slice of brioche, spread with any leftover vanilla cream cheese frosting, and top with fresh sliced berries for a fast brunch situation.
