The Scoop

A crisp graham cracker-oat base gets layered with spiced apples and more crumb topping, then finished with a simple glaze for a sweet-tart treat that’s made for sharing.
Hack it:
Swap Granny Smiths for Honeycrisp, Pink Lady, or a mix of tart and sweet apples.
Add chopped pecans or walnuts to the streusel for extra crunch.
Mix raisins, dried cranberries, or chopped dried apples into the filling.
Add orange zest or a splash of lemon juice to brighten the apple layer.
Swap the glaze for caramel sauce or finish with a sprinkle of flaky salt.
Serve warm with vanilla ice cream or whipped cream for full dessert mode.
Leftovers:
Warm a bar and top with vanilla ice cream for an instant apple crumble sundae.
Layer chunks with Greek yogurt, whipped cream, and caramel for a quick parfait.
Chop into pieces and sprinkle over oatmeal or overnight oats.
Fold chunks into vanilla ice cream for an apple-streusel-style scoop.
Turn leftover bars into a bread-pudding-style bake with a simple custard.

Ingredients

For the bars:

  • 1 1/4 cups all-purpose flour
  • 3/4 cup graham cracker crumbs
  • 3/4 cup quick-cooking oats
  • 3/4 cup packed brown sugar, divided
  • 1/4 cup sugar
  • 3/4 cup butter, melted
  • 2 large Granny Smith apples, peeled and chopped
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger
  • 1/8 teaspoon ground cloves

For the glaze:

  • 1/2 cup confectioners' sugar
  • 1 tablespoon 2% milk

Directions

  • Preheat the oven to 350 degrees F.
  • Grease a 9x13-inch pan.
  • Mix the flour, the graham cracker crumbs, the oats, 1/2 cup of the brown sugar, and the sugar.
  • Stir in the melted butter.
  • Reserve 1 cup of the crumb mixture for the topping, pressing the remaining crumb mixture onto the bottom of the prepared pan.
  • Bake the pan until the crumb crust is set, about 8-10 minutes.
  • Cool the crust on a wire rack.
  • Mix the apples, the cinnamon, the ginger, the cloves, and the remaining brown sugar together.
  • Spread the apple mixture over the crust.
  • Sprinkle the apples with the reserved crumb mixture.
  • Bake until the apples are tender, about 30-35 minutes.
  • Let the bars cool completely on a wire rack.
  • Mix together the confectioners' sugar and the milk.
  • Drizzle the glaze over the dessert.
  • Cut the dessert into bars and serve.
