Ingredients

  • 1 (16-ounce) container carrot juice chilled
  • 7 ounces pineapple fresh or canned, cubed
  • 2 ripe bananas peeled and broken into chunks
  • 1 (1-inch) knob fresh ginger peeled
  • 1/3 cup cashew nuts
  • 1 lime juiced, plus 1 lime, sliced, for garnish

Directions

  • In a blender, add the carrot juice, the pineapple cubes, the bananas, the ginger, the cashew nuts, and the juice of 1 of the limes and blend until smooth.
  • Serve garnished with the lime slices.
