Recipe Background

Hot Fudge Sundae Bars combine childhood nostalgia with effortless prep, perfect for any festive occasion.
Stepping into my nephew's backyard birthday bash last summer, I felt like an imposter in my own family. Everyone seemed to bring the perfect dish, and there I was, clutching a hastily wrapped dish of hot fudge sundae bars. Bringing them was a gamble—a sweet, sticky gamble—but my nephew's eyes lit up when he saw those ice cream sandwiches covered in whipped topping and sprinkled with peanuts. As his pint-sized friends gathered around, their curiosity piqued by the subtle whiff of chocolate syrup and peanut butter, I knew this dessert was either going to be a hit or a hilarious miss.
Balancing the texture was key, and I remembered my mom's advice: let the chocolate-peanut butter mixture cool properly to avoid melting the whipped topping into oblivion. The kids' laughter and excitement felt electric, especially when serving them something that combined familiar favorites like ice cream sandwiches and the unexpected crunch of salted peanuts. As they devoured the bars, I couldn't help but laugh—not just at their ice cream-covered faces, but at how this accidental dessert success turned me into the "Cool Uncle" without even trying.
Days later, my nephew called, asking if I could bring those sundae bars to every birthday forever. I'd accidentally become a legend in a child's eyes, and all because of a dessert prepared in a last-minute scramble, thanks to a forgotten promise and a just-in-time trip to the grocery store. The bars became not just a sweet treat, but a memory maker, connecting generations over layers of familiar flavor.

Ingredients

  • 1 (16-ounce) can chocolate syrup
  • 3/4 cup peanut butter
  • 19 ice cream sandwiches of your choice
  • 1 (12-ounce) container frozen whipped topping thawed
  • 1 cup salted peanuts

Directions

  • Pour the chocolate syrup into a medium microwave-safe bowl and microwave, stopping to stir every 30 seconds, until hot, for a total of about 2 minutes on high. Do not allow it to boil.
  • Stir the peanut butter into the warmed chocolate until smooth.
  • Allow the chocolate-peanut butter mixture to cool to room temperature.
  • Line the bottom of a 9x13-inch dish with a layer of the ice cream sandwiches.
  • Spread 1/2 of the whipped topping over the sandwiches in an even layer.
  • Spoon 1/2 of the chocolate-peanut butter mixture over the whipped topping layer, spreading it into an even layer.
  • Top the whipped topping layer with 1/2 of the peanuts.
  • Repeat the layers once.
  • Freeze the layered mixture until firm, for at least 1 hour and up to overnight.
  • Cut the frozen layered mixture into squares.
  • Serve.
