A refreshing summer salad combining watermelon, strawberries, and blueberries with a minty lime dressing.
There are few drinks that speak the language of summer quite like mojitos, and there are few salads that so beautifully capture the same feeling as this Mojito Salad. Refreshing, juicy, and bright watermelon, mixed with strawberries and blueberries, and all coated in a tangy, electric, and cooling minty dressing with a splash of rum for fun! Mojito Salad is a fun way to cool down when the sun is blazing!
Ingredients
- 8 cups watermelon cubed into 1-inch pieces
- 4 cups strawberries hulled and quartered
- 3 cups blueberries
- 18 large mint leaves chopped
- 1/2 cup fresh lime juice
- 4 tablespoons powdered sugar
- 4 tablespoons white rum optional
- jícama optional, to taste, cut into 1/4-inch slices and shaped into stars
Directions
- In a large bowl, add the watermelon, the strawberries, and the blueberries.
- In a small bowl, combine the mint, the lime juice, and the powdered sugar.
- Using the back of a spoon, muddle the mint.
- Stir in the rum.
- Drizzle the lime dressing over the fruit, gently folding to combine.
- Chill the salad for at least 2 hours.
- Fold the fruit again and add the jícama.
- Serve.
