These crispy, cheese-loaded breakfast handhelds are about to make your snooze button completely obsolete.
If your ideal morning involves minimal cognitive effort and maximum melted cheddar, throwing bacon and fluffy eggs inside a toasted tortilla is pure operational efficiency.Let’s admit that breakfast burritos had a good run, but the crisp, golden crunch of a quesadilla is superior in every way!
Hack it: Make four quesadillas at once by assembling them on a baking sheet, brushing the tops with a little bacon grease or oil, and baking at 425°F (220°C) for 10–12 minutes until crispy.Swap standard flour tortillas for low-carb keto tortillas, use liquid egg whites, and throw in a handful of fresh baby spinach to boost the fiber without sacrificing the crunch.Assemble a single quesadilla, secure the top tortilla with a toothpick, and air fry at 375°F (190°C) for 5–7 minutes for an ultra-crispy, oil-free crust.Toss diced bell peppers, black beans, or pickled jalapeños directly into the scrambled eggs while cooking for extra flavor and texture.
Leftovers: Make a crispy quesadilla pizza base: Top a cold leftover quesadilla with a spoonful of warm salsa or marinara, a sprinkle of extra cheese, and broil for 3 minutes until bubbling like a Mexican-style flatbread pizza.Slice the leftover quesadilla into triangular strips, bake or air fry until extra crunchy, and toss in warm salsa Verde; top with a sunny-side-up egg and cilantro.Cut leftover quesadillas into bite-sized wedges, arrange them on a sheet pan with extra beans and cheese, melt under the broiler, and scoop up with extra guacamole.
