Recipe Background

This salad combines broccoli, bacon, and Craisins for a perfect potluck option.
The first time I made this Perfect Combo Potluck Salad was for a promotion dinner at my first real job. I remember standing in the tiny kitchen of my shared apartment, wondering how to prepare something that would impress my new colleagues. The fridge was a bit sparse, but I always seemed to have bacon and a variety of fresh produce on hand. That's when I decided to transform my regular broccoli into something magical. The crisp bite of broccoli teamed up with the sweet notes of Craisins and a sprinkle of sliced almonds, and I knew I was onto something that balanced color and texture beautifully.
Crafting the dressing was another small adventure. I whisked mayonnaise with white wine vinegar, added a bit of sugar for sweetness, and seasoned the blend with sea salt and black pepper. As the aroma of bacon wafted through the kitchen, chopped apples joined the mix, adding a tart freshness. A quick chef’s tip: let the bacon cool before crumbling to achieve those perfect crispy bits. After mixing, I let the salad chill in the refrigerator, giving the flavors a chance to meld.
It was a hit at the dinner, providing a refreshing, crunchy contrast to heavier dishes. Watching colleagues nibble through conversations, I knew this wasn’t just a salad; it was a chapter in my budding culinary career. From that moment on, this dish became a staple, reminding me of that exhilarating blend of nerves and excitement on my first promotion dinner.

Ingredients

For the salad:

  • 1/2 pound bacon
  • 2 large heads fresh broccoli
  • 1 small red onion diced

  • 1 red apple cored and chopped
  • 3/4 cup almonds sliced or slivered

For the dressing:

  • 1 cup mayonnaise
  • 1/2 cup white sugar
  • 2 tablespoons white wine vinegar

  • In a deep skillet over medium heat, add the bacon and cook until evenly browned, about 6-10 minutes.
  • Transfer the bacon to a paper-towel-lined plate to cool and then crumble it.
  • Cut the broccoli into bite-size florets.
  • In a bowl, add the broccoli, the red onion, the bacon, the Craisins, the apples, and the almonds and mix well to combine.
  • In a separate bowl, add the mayonnaise, the sugar, the white wine vinegar, the salt, and the pepper and whisk together until well-incorporated.
  • Add the dressing to the salad and toss to combine.
  • Transfer the salad to the refrigerator and let it chill for at least 1 hour.
