Ingredients
- 10 bacon strips diced
- 1 large onion chopped
- 1 cup carrots diced
- 3 tablespoons all-purpose flour
- 3 cups whole milk
- 1 1/2 cups water
- 2 1/2 cups potatoes cubed
- 1 (15.25 ounce) can whole kernel corn drained
- 2 teaspoons chicken bouillon granules
- pepper to taste
- 3 cups cheddar cheese shredded
- 2 cups ham cubed and fully cooked
Directions
- In a Dutch oven, cook the bacon over medium heat until crisp, about 5 minutes.
- Using a slotted spoon, transfer the bacon to paper towels to drain.
- In the bacon drippings in the Dutch oven over medium heat, sauté the onion and the carrots until tender, about 5 minutes.
- Stir in the flour until blended.
- Gradually add the milk and the water.
- Bring the mixture to a boil and cook, stirring, until thickened, about 2 minutes.
- Add the potatoes, the corn, the bouillon, and the pepper.
- Reduce the heat to low and simmer, uncovered, until the potatoes are tender, about 20 minutes.
- Add the cheese and the ham and heat until the cheese is melted.
- Stir in the cooked bacon.
- Serve.
