Ingredients
For the fruit salad:
- 1 (6-ounce) package strawberry gelatin
- 2 cups hot water
- 1 3/4 cups cold water
- 1 (8-ounce) carton imitation whipped topping
- 1 pound fresh or frozen strawberries sliced

Directions
- In a large serving dish, add the strawberry gelatin, the hot water, and the cold water and stir until the gelatin is completely dissolved.
- Place the serving dish in the refrigerator and let the gelatin mixture set until thickened, but still runny, about 45 minutes-1 hour.
- Use a whisk or an electric hand mixer to beat the gelatin mixture until it is foamy and thick.
- Add 8 ounces of the imitation whipped topping to the thickened gelatin mixture and stir to combine.
- Add 1 pound of the strawberries to the gelatin mixture and gently stir to combine.
- Place the serving dish in the refrigerator and let the fruit salad set until it is firm and ready to serve, about 2 hours.
- Serve the fruit salad topped with the remaining whipped topping, the remaining strawberry slices, and the mint leaves.
