Ingredients
For the syrup:
- 1/2 cup sugar
- 1/2 cup water
- zest and juice of 1 pink or red grapefruit
- 1/2 vanilla bean
For the fruit salad:
- 3 pink or red grapefruits cut into small pieces, peel discarded
- 1 quart strawberries hulled and halved
- 4 cups red grapes halved
- 1 pint raspberries
- 1/4 cup fresh mint thinly sliced
Directions
- In a small saucepan over medium heat, combine the sugar, the water, the grapefruit zest, the grapefruit juice, and the vanilla bean half and stir to combine.
- Bring the syrup mixture to a boil, stir to dissolve the sugar, reduce the heat to low, and simmer until the syrup slightly thickens, about 6-8 minutes.
- Add the grapefruit pieces, the strawberries, and the grapes to a large bowl.
- Discard the vanilla bean half from the syrup.
- Pour the syrup over the fruit and toss to coat.
- Chill the fruit salad until ready to serve or up to overnight.
- Add the raspberries and the mint to the salad and gently toss.
- Serve.
