Recipe Background

Spring Mimosas blend fresh strawberries with prosecco to celebrate any occasion.
The first time I celebrated a tax refund with flair was a sunny afternoon that called for something special. Fresh strawberries were in season, their vibrant color practically winking at me from the market stalls, and I had just enough orange juice in the fridge from breakfast. My celebratory instincts nudged me toward an idea: sparkling mimosas. Instead of rushing the process, I took my time to hull and slice strawberries, and then puréed them with orange juice until the mixture was refreshingly smooth.
It felt like adulting at its most fun. Pouring prosecco gracefully into six Champagne flutes, I marveled at the bubbles dancing in the glass like tiny party guests. Each flute received a generous helping of the strawberry-orange purée. A little tip for you: adding the purée slowly transforms each sip into a burst of fruity joy.
I invited a few friends over to toast the season and my newfound financial flexibility. Garnishing with extra strawberry slices added a splash of elegance—a pro move I've embraced for everything from casual brunches to celebratory Saturdays. We lounged on the deck, mimosas in hand, a breeze full of spring promise surrounding us. It was one of those perfect afternoons where the drinks somehow made the day feel as sparkling as the prosecco itself.

Ingredients

  • 2 cups fresh strawberries hulled and sliced, plus more, to taste, for garnish
  • 1 cup orange juice
  • 1 (750-mililitter) bottle prosecco

Directions

  • In a blender, add 2 cups of the strawberries and the orange juice and blend until a purée forms.
  • In six Champagne flutes, add about 1/2 cup of the prosecco to each and top with 1/4 cup of the strawberry purée.
  • Serve the mimosas garnished with the extra strawberry slices.
