This is not the time to be polite about cheese.
Texas Trash Dip is a hot, bubbling skillet-sized invitation to grab a tortilla chip and go back for another one.
Cream cheese, sour cream, refried beans, green chiles, taco seasoning, and a serious amount of melty cheese come together into a creamy, savory dip that disappears suspiciously quickly at game nights and parties.
Hack it:
Make it smoky: Add smoked paprika or a little cumin to the taco seasoning for extra depth.
Turn it into a layered dip: Add a layer of salsa, guacamole, or chopped tomatoes between the beans and cheese.
Make it lighter: Use reduced-fat cream cheese and sour cream, and bulk up the dip with extra beans, corn, or vegetables.
Serve it differently: Skip the chips and spoon the warm dip into tortillas with lettuce, tomatoes, and avocado for quick taco-style wraps.
Leftovers:
Loaded Nachos: Spread tortilla chips on a tray, spoon over the leftover dip, add extra cheese, and bake until bubbling.
Taco Quesadillas: Spread the dip between two tortillas and cook until golden and crisp.
Breakfast Tacos: Warm the dip and tuck it into tortillas with scrambled eggs, avocado, and salsa.
Cheesy Rice Bowl: Spoon the dip over hot rice with corn, tomatoes, avocado, and fresh cilantro.

Ingredients

  • 1 (8-ounce) package of cream cheese
  • 1 cup sour cream
  • 2 (16-ounce) cans of refried beans
  • 1 (7-ounce) can of chopped green chiles, drained
  • 1 (1-ounce) package taco seasoning mix
  • 4 cups Mexican cheese blend, shredded and divided
  • green onion, optional, chopped, for serving
  • black olives, optional, sliced, for serving
  • tortilla chips, optional, for serving

Directions

  • Preheat the oven to 350 degrees F.
  • Spray a 9x13-inch baking dish with cooking spray.
  • In a large microwave-safe bowl, microwave the cream cheese and sour cream together on high until the cheese softens, about 1 minute.
  • Transfer the bowl from the microwave.
  • Whisk the cream cheese and sour cream together until smooth.
  • Add the refried beans, green chiles, taco seasoning, and 2 cups shredded cheese.
  • Spread the bean mixture into the prepared baking dish.
  • Top the mixture with the remaining cheese.
  • Bake until the cheese is melted, about 25 minutes.
  • Garnish with green onions and black olives.
  • Serve with tortilla chips.
