Ingredients
For the lemon vinaigrette:
- 1 lemon juiced
- 1 lime juiced
- 1/4 cup olive oil
- 2 cloves garlic minced
- 1 tablespoon honey
- salt to taste
- pepper to taste
For the salad:
- 2 chicken breasts cooked and shredded
- 2 avocados diced
- 1 cup corn kernels
- 6 slices bacon cooked crisp and chopped
- 4 cups lettuce chopped
- 2 Roma tomatoes seeded and diced
- 2 tablespoons fresh parsley minced
- 2 tablespoons fresh scallions chopped
Directions
- In a small bowl or in a mason jar, combine the lemon juice, the lime juice, the olive oil, the garlic, the honey, the salt, and the pepper.
- Taste the dressing for seasoning and adjust with the salt and the pepper as needed.
- In a large bowl, toss the chicken, the avocados, the corn kernels, the bacon, the lettuce, the tomatoes, the parsley, and the scallions together until evenly distributed.
- Toss the salad with 1/2 of the dressing.
- Add more of the dressing over top as desired.
- Serve.
