  • 1 pound thick-cut bacon diced
  • 1 large onion diced
  • 1 pound lean ground beef
  • 3 cloves garlic minced
  • 2/3 cup long grain rice
  • 6 cups cabbage chopped
  • 1 (28-ounce) can diced tomatoes
  • 1 (10.75-ounce) can tomato soup
  • 2 tablespoons tomato paste
  • 5 cups beef broth
  • 1 1/2 cups vegetable juice
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • 1 tablespoon Worcestershire sauce
  • salt to taste
  • pepper to taste
  • parsley optional, to taste, chopped, for garnish

Directions

  • In a skillet over medium-high heat, add the diced bacon and cook, while stirring, until crisp, about 5-8 minutes.
  • Using a slotted spoon, transfer the bacon pieces to paper towels to drain.
  • Reserve 1 tablespoon of the bacon drippings in the skillet, draining the remainder.
  • Reduce the heat to medium.
  • In the skillet with the bacon drippings, add the onions and the beef and cook, while crumbling, until the onions are browned and the meat is no longer pink, about 5-7 minutes.
  • Drain the excess fat from the skillet.
  • Transfer the beef mixture to a slow cooker.
  • In the slow cooker, add the garlic, the rice, the cabbage, the tomatoes and their juices, the tomato soup, the tomato paste, the broth, the vegetable juice, the paprika, the thyme, the Worcestershire sauce, the salt, and the pepper and stir to combine.
  • Cover the slow cooker and cook until the rice is fully cooked, 3-4 hours on high or 6-7 hours on low.
  • Add 1/2 of the bacon pieces to the soup and stir to combine.
  • Spoon the soup into serving bowls.
  • Serve the soup topped with the remaining bacon pieces and the chopped parsley.
