Ingredients

  • 10 bacon strips diced
  • 1 large onion chopped
  • 1 cup carrots diced
  • 3 tablespoons all-purpose flour
  • 3 cups whole milk
  • 1 1/2 cups water
  • 2 1/2 cups potatoes cubed
  • 1 (15.25 ounce) can whole kernel corn drained
  • 2 teaspoons chicken bouillon granules
  • pepper to taste
  • 3 cups cheddar cheese shredded
  • 2 cups ham cubed and fully cooked

Directions

  • In a Dutch oven, cook the bacon over medium heat until crisp, about 5 minutes.
  • Using a slotted spoon, transfer the bacon to paper towels to drain.
  • In the bacon drippings in the Dutch oven over medium heat, sauté the onion and the carrots until tender, about 5 minutes.
  • Stir in the flour until blended.
  • Gradually add the milk and the water.
  • Bring the mixture to a boil and cook, stirring, until thickened, about 2 minutes.
  • Add the potatoes, the corn, the bouillon, and the pepper.
  • Reduce the heat to low and simmer, uncovered, until the potatoes are tender, about 20 minutes.
  • Add the cheese and the ham and heat until the cheese is melted.
  • Stir in the cooked bacon.
  • Serve.
