This recipe takes all the good flavors of a fully loaded baked potato and packs them into a single, crowd-pleasing bake that takes under an hour. You just boil some cubed potatoes, mix them with mayonnaise and cubes of rich cheese, then smother the top with savory bacon bits and fresh green onions. It bakes into a bubbly, melty masterpiece that is crispy on the edges and beautifully fluffy in the middle, making it the ultimate emotional support side dish for a hectic weeknight!
Ingredients
- 8-10 red or brown potatoes, peeled and cubed
- 1-1 1/2 cups mayonnaise
- 1 pound Velveeta, cubed
- 3-4 green onions, chopped
- 1 (4 ounce) package bacon bits
Directions
- Preheat the oven to 350 degrees F.
- Boil the cubed potatoes until perfectly tender, about 10-15 minutes.
- Drain the potatoes and set aside.
- Add the cooked potatoes to a large mixing bowl.
- Combine the potatoes with the mayonnaise and the cheese.
- Stir in the green onions, reserving a few to be used as a garnish.
- Spray a 9x13-inch casserole dish with non-stick cooking spray.
- Add the potato mixture to the prepared casserole dish, spreading it evenly.
- Top the potato mixture with the bacon bits, the remaining green onions, and any other preferred toppings.
- Bake covered for 30 minutes.
- Uncover and bake until the cheese on top is melty and bubbly, about 5-10 minutes.
- Serve warm.
