Our kitchen consisted of a hot plate and a finicky microwave, so we quickly learned to get creative. As I was unpacking our few cherished kitchen items, I stumbled upon a forgotten bag of tart apples and a small stash of oats. These quickly became the backbone of our first meal in our new place: a simple apple crisp.
In the tiny kitchen, I peeled and sliced the apples, letting them mingle with a splash of lemon juice and a dusting of cinnamon. Ingredients
For the apples:
- 4 medium tart apples peeled and thinly sliced
- 1/4 cup sugar
- 1 tablespoon all-purpose flour
- 2 teaspoons lemon juice
- 1/4 teaspoon ground cinnamon
For the topping:
- 2/3 cup old-fashioned oats
- 1/2 cup brown sugar packed
- 1/4 cup all-purpose flour
- 1/2 teaspoon ground cinnamon
- 3 tablespoons butter cold
- vanilla ice cream optional, for serving
Directions
- Grease a microwave-safe 9-inch deep-dish pie pan.
- Toss the apples with the sugar, 1 tablespoon of the flour, the lemon juice, and 1/4 teaspoon of the cinnamon
- Transfer the apples to the prepared pie plate.
- Mix the oats, the brown sugar, the remaining flour, and the remaining cinnamon together.
- Cut the butter into the oats mixture and mix until crumbly.
- Sprinkle the topping mixture over the filling in the pie plate.
- Cover the pie plate with wax paper and microwave on high until the apples are tender, about 5-7 minutes.
- Serve hot with the ice cream.
