Italy's Best Salad

If Italy had a dress code, this salad would be wearing it!
In all honesty, there’s nothing unexpected about it, just tomatoes, mozzarella, avocado, and cucumbers bathed in a lemon-herb dressing that tastes like afternoons on the Amalfi Coast.  It’s colorful, it’s ridiculously easy to make, and it proves that you don’t really need a long ingredient list to make an unforgettable salad.
Take notes. Dress code: Italy. Unpretentious and yummy.
Hack it: 
Add fresh basil for a chef’s-kiss-result.
Tired of mozzarella? Can’t relate, but you do you. Burrata also works exceptionally well here.
Add homemade croutons for texture and crunch.
Add grilled chicken strips for protein and turn this into a complete meal.
Leftovers:
Give the salad a gentle toss before serving again with a squeeze of fresh lemon to revive it.
For meal prep, keep the avocado and dressing separately until ready to serve, to keep them fresh and crisp.
Just a tiny bit of leftovers? Add fusilli or penne and turn this into a quick but flavorful pasta salad.

Ingredients

For the salad:

  • 2 avocados, diced
  • 1 English cucumber, sliced
  • 3 Roma tomatoes, diced
  • 1/4 cup red onion, sliced
  • 1/2 cup small mozzarella cheese balls

For the dressing:

  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 tablespoon Italian seasoning
  • salt, to taste
  • pepper, to taste

Directions

  • In a large bowl, combine the avocados, the cucumber, the tomatoes, the red onion, and the mozzarella cheese balls and gently toss.
  • In a small bowl, whisk the olive oil, the lemon juice, and the Italian seasoning together.
  • Add the dressing to the salad and toss.
  • Season the salad with the salt and the pepper.
  • Serve.
