If Italy had a dress code, this salad would be wearing it!
In all honesty, there’s nothing unexpected about it, just tomatoes, mozzarella, avocado, and cucumbers bathed in a lemon-herb dressing that tastes like afternoons on the Amalfi Coast. It’s colorful, it’s ridiculously easy to make, and it proves that you don’t really need a long ingredient list to make an unforgettable salad.

Ingredients
For the salad:
- 2 avocados, diced
- 1 English cucumber, sliced
- 3 Roma tomatoes, diced
- 1/4 cup red onion, sliced
- 1/2 cup small mozzarella cheese balls
For the dressing:
- 2 tablespoons olive oil
- 2 tablespoons lemon juice
- 1 tablespoon Italian seasoning
- salt, to taste
- pepper, to taste
Directions
- In a large bowl, combine the avocados, the cucumber, the tomatoes, the red onion, and the mozzarella cheese balls and gently toss.
- In a small bowl, whisk the olive oil, the lemon juice, and the Italian seasoning together.
- Add the dressing to the salad and toss.
- Season the salad with the salt and the pepper.
- Serve.
