Recipe Background
Roasted cabbage wedges: vibrant, simple, and toddler-friendly.
In the early whirlwind days of single parenthood, my Sunday routine needed a reinvention. One Sunday, while juggling a toddler's nap schedule and realizing my produce supply was dwindling, I stumbled upon the lone half-head of green cabbage in the fridge. It was squat and unassuming, begging for attention amidst the quietly confident lemons beside it. I grabbed the red pepper flakes and garlic powder, my kitchen cornerstones, and put together something that felt like magic.
That first batch of roasted cabbage was crafted during a quiet moment of toddler downtime. I brushed olive oil lovingly over each wedge, hoping the oven would transform them into something glorious. As the enticing aroma of roasting cabbage filled the air, I realized there was a profound peace found in simplicity. The surprises scattered in those charred edges, cheered by a vibrant splash of lemon, showed me how bold flavors can emerge from minimal ingredients. I discovered a trick, too: flipping the wedges halfway keeps them crisp and encourages even caramelization.
Since that day, roasted cabbage has become our Sunday ritual. A reliable constant amidst life’s unpredictability. The charred perfection of each wedge reflects resilient beauty. It's become a family favorite, easy enough to make with little hands offering lemon-squeezing assistance. Often, these small cooking victories became milestones in themselves, nourishing a home filled with laughter and lemon-infused memories.
