The Scoop
Calling this a "grilled cheese" is a massive understatement.
It is a full-blown, multi-layered brunch identity crisis contained between two slices of white bread. You have crispy bacon, buttery avocado, a perfectly cooked egg, and enough cheese to melt your remaining brain cells on a lazy Sunday.
This is the ultimate "I can't decide if I want an omelet, a BLT, or a nap" solution.
Ingredients
- 1/2 tablespoon unsalted butter, plus more, to taste
- 1 large egg
- salt, to taste
- pepper, to taste
- 2 slices white bread
- 1/4 cup sharp cheddar cheese, shredded
- 3 slices bacon, cut in half and cooked
- 1/2 avocado, sliced
- 1 slice Muenster or Swiss cheese
Directions
- In a small skillet over medium heat, melt 1/2 tablespoon of the butter.
- Add the egg, the salt, and the pepper to the melted butter and cook, about 2 minutes.
- Flip the egg and cook, about 45 seconds. Transfer the egg to a plate.
- Spread the extra butter on 1 side of each of the bread slices.
- In the same skillet over medium heat, place 1 of the bread slices, buttered-side down, and top with 1/2 of the cheddar cheese, the cooked bacon, the remaining cheddar cheese, the cooked egg, the avocado, the Muenster cheese slice, and the remaining bread slice, buttered-side up.
- Cook the sandwich for about 5 minutes, then gently flatten it with a spatula.
- Carefully flip the sandwich and cook until it is toasted and melty, about 3-4 minutes.
- Slice and serve.
