The Scoop

Calling this a "grilled cheese" is a massive understatement.
It is a full-blown, multi-layered brunch identity crisis contained between two slices of white bread. You have crispy bacon, buttery avocado, a perfectly cooked egg, and enough cheese to melt your remaining brain cells on a lazy Sunday.
This is the ultimate "I can't decide if I want an omelet, a BLT, or a nap" solution.
Hack it:
Slather the outer slices of bread with mayonnaise instead of butter to get an impossibly even, golden-brown crust.
Drizzle a layer of sriracha or hot honey over the avocado before closing the sandwich to cut through the heavy cheese layers.
Keep the egg yolk completely runny instead of fully cooking it, creating an instant dipping sauce when you cut the sandwich in half.
Place the avocado directly between the cheese layers so it stays securely locked inside the sandwich instead of sliding out when you take a bite.
Leftovers:
Chop the cold, leftover sandwich into bite-sized pieces, toss them into a hot skillet to re-crisp, and wrap them in a warm tortilla with extra salsa.
Cut the leftover sandwich into small squares, bake them at 400°F (200°C) for 7 minutes, and use them to completely transform a basic tomato soup or green salad.
Chop up the remaining ingredients, discard the bread, and fold the bacon, avocado, and leftover cheese directly into a box of instant mac and cheese for a luxury upgrade.

Ingredients

  • 1/2 tablespoon unsalted butter, plus more, to taste
  • 1 large egg
  • salt, to taste
  • pepper, to taste
  • 2 slices white bread
  • 1/4 cup sharp cheddar cheese, shredded
  • 3 slices bacon, cut in half and cooked
  • 1/2 avocado, sliced
  • 1 slice Muenster or Swiss cheese

Directions

  • In a small skillet over medium heat, melt 1/2 tablespoon of the butter.
  • Add the egg, the salt, and the pepper to the melted butter and cook, about 2 minutes.
  • Flip the egg and cook, about 45 seconds. Transfer the egg to a plate.
  • Spread the extra butter on 1 side of each of the bread slices.
  • In the same skillet over medium heat, place 1 of the bread slices, buttered-side down, and top with 1/2 of the cheddar cheese, the cooked bacon, the remaining cheddar cheese, the cooked egg, the avocado, the Muenster cheese slice, and the remaining bread slice, buttered-side up.
  • Cook the sandwich for about 5 minutes, then gently flatten it with a spatula.
  • Carefully flip the sandwich and cook until it is toasted and melty, about 3-4 minutes.
  • Slice and serve.
