Ingredients
- 1 pound extra-lean ground beef
- 1 cup plus 1/2 cup Mexican cheese blend shredded and divided
- 1 (1-ounce) package taco seasoning mix
- 1 cup long-grain white rice uncooked
- 1 cup frozen mixed vegetables
- 1 (14.5-ounce) no-salt-added diced tomatoes undrained
- 1 cup medium salsa preferably chunky
- 1 cup fat-free reduced sodium chicken broth
Directions
- Preheat the oven to 375 degrees F.
- Spray a 9x13-inch baking dish with cooking spray.
- In a large, non-stick skillet over medium-high heat, add the beef and cook until brown, about 6-8 minutes.
- Drain the fat from the skillet.
- Add 1/2 cup of the cheese, the taco seasoning, the rice, the mixed vegetables, the tomatoes, the salsa, and the chicken broth to the beef, mixing well.
- Spoon the mixture into the prepared baking dish.
- Cover the baking dish and bake until the rice is tender, about 40-50 minutes.
- Top the casserole with 1 cup of the cheese and bake, uncovered, until the cheese is melted, about 5 minutes.
- Serve.
