Ingredients

  • 1 pound extra-lean ground beef
  • 1 cup plus 1/2 cup Mexican cheese blend shredded and divided
  • 1 (1-ounce) package taco seasoning mix
  • 1 cup long-grain white rice uncooked
  • 1 cup frozen mixed vegetables
  • 1 (14.5-ounce) no-salt-added diced tomatoes undrained
  • 1 cup medium salsa preferably chunky
  • 1 cup fat-free reduced sodium chicken broth

Directions

  • Preheat the oven to 375 degrees F.
  • Spray a 9x13-inch baking dish with cooking spray.
  • In a large, non-stick skillet over medium-high heat, add the beef and cook until brown, about 6-8 minutes.
  • Drain the fat from the skillet.
  • Add 1/2 cup of the cheese, the taco seasoning, the rice, the mixed vegetables, the tomatoes, the salsa, and the chicken broth to the beef, mixing well.
  • Spoon the mixture into the prepared baking dish.
  • Cover the baking dish and bake until the rice is tender, about 40-50 minutes.
  • Top the casserole with 1 cup of the cheese and bake, uncovered, until the cheese is melted, about 5 minutes.
  • Serve.
