Ingredients

For the bread:

  • 1 cup quick-rolled oats
  • 1 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 cup brown sugar, packed
  • 1 teaspoon cinnamon
  • 1 teaspoon baking powder
  • 1/4 cup packaged fine-shredded sweetened coconut
  • 1 egg
  • 2 tablespoons vegetable oil
  • 1/2 cup low-fat vanilla Greek yogurt
  • 1 teaspoon vanilla
  • 2 apples, such as Gala or Ambrosia, peeled and cored, finely chopped
  • 2 tablespoons water
  • 1/2 cup prunes, pitted
  • 1/2 cup light coconut milk
  • 1/2 cup plus 2 tablespoons walnuts, chopped, divided

For the glaze:

  • 3 tablespoons unsalted butter, cut into pieces
  • 1 1/2 tablespoons heavy cream
  • 1 1/2 tablespoons low-fat cream cheese, room temperature
  • 1/2 cup powdered sugar

Directions

  • Preheat the oven to 350 degrees F.
  • Coat a 9x5-inch loaf pan with nonstick cooking spray.
  • In a large bowl, combine the oats, the flour, the baking soda, the brown sugar, the cinnamon, the baking powder, and the shredded coconut.
  • In a second bowl, add the egg and beat with an electric hand mixer until it is fluffy.
  • Add the vegetable oil to the egg and beat until it is well-combined.
  • Add the yogurt, the vanilla, and the apples to the egg mixture and stir together.
  • In a blender or food processor, add the water and the prunes and purée until smooth.
  • Add the prune purée and the coconut milk to the apple mixture and mix them together.
  • Add the apple mixture to the oat mixture.
  • Add 1/2 cup of the walnuts to the batter and mix to combine.
  • Pour the batter into the prepared loaf pan and sprinkle with the remaining walnuts.
  • Place the loaf pan on the center rack in the oven and bake until a toothpick inserted into the center comes out clean, about 50 minutes.
  • Transfer the pan to a wire rack and let it cool, about 5 minutes.
  • Invert the bread from the pan onto a wire rack to cool completely, about 30 minutes.
  • In a light-colored pan over medium heat, add the butter pieces and melt, using a heatproof spatula to stir frequently, until the bubbling noise subsides and the butter is golden-brown.
  • In a small bowl, add the brown butter, the heavy cream, the cream cheese, and the powdered sugar and stir until well-combined.
  • Evenly spread the glaze over the cooled bread.
  • Slice and serve.
