They're perfectly crispy on the outside and loaded with savory chicken and creamy refried beans on the inside! Ingredients
- 1 1/2 cups chicken breast boneless and skinless, cooked and shredded
- 1 (14-ounce) can fat-free refried beans
- 1/2 cup jarred salsa verde can substitute with salsa or enchilada sauce
- 1/2 cup reduced-fat cheddar cheese shredded
- 18 (6-inch) corn tortillas
- cooking spray to taste
- pico de gallo optional, to taste, for serving
- fresh cilantro optional, to taste, thinly sliced, for serving
Directions
- Preheat the oven to 425 degrees F.
- Coat a baking sheet with cooking spray.
- In a large bowl, add the chicken, the beans, the salsa verde, and the cheese and stir to combine.
- Wrap the tortillas in moist paper towels.
- Microwave the tortillas in the moist paper towels until soft and pliable, about 20-40 seconds. You may need to do this in batches for the best results.
- Fill each of the warm tortillas evenly with the chicken mixture, being careful not to overfill them.
- Roll the tortillas up and place them on the prepared baking sheet, seam-side down.
- Spray the rolled tortillas with the cooking spray, coating them well.
- Bake until browned and crispy, about 15-20 minutes.
- Serve hot with the pico de gallo and the coriander.
