Ingredients

  • 2 pounds hot breakfast sausage
  • 1 (30-32 ounce) bag frozen tater tots
  • 1 1/2 cups cheddar cheese, shredded
  • 1/2 cup mozzarella cheese, shredded
  • 8 eggs
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon garlic powder
  • 2 cups milk

Directions

  • Preheat the oven to 350 degrees F.
  • Gently grease a 9x13-inch oven-safe baking pan or sheet pan with cooking spray or butter.
  • Cook the sausage until it is no longer pink in a separate pan or skillet, about 5 minutes.
  • Drain off the fat when the sausage is done cooking.
  • In a large mixing bowl, toss together the tater tots, the cooked sausage, the cheddar cheese, and the mozzarella cheese.
  • Pour the mixture into the prepared pan.
  • Whisk together the eggs, salt, pepper, onion powder, garlic powder, and milk.
  • Pour the egg mixture over the tater tots.
  • Bake the dish uncovered until the eggs are set, about 60-70 minutes.
