The Scoop

Who knew asparagus needed a little glow-up?
Roasted until perfectly tender, then finished with lemon, parmesan, herbs, and a pinch of red pepper flakes, Yum-Yum Asparagus turns an everyday veggie into the first thing to steal the spotlight at dinner.
Plus, this recipe comes together in minutes, so you have no excuse not to try it. Even if you are not the biggest fan of asparagus, give it a go. We know you’ll be pleasantly surprised!
Hack it:
Add toasted pine nuts or sliced almonds before serving for healthy fats and the perfect crunch.
Swap parmesan for pecorino. Slice it with a vegetable peeler to create cheese ribbons for a gorgeous presentation.
Use a 50-50 mix of orange zest/juice and lemon zest/juice to take this to a divine level.
Add a pinch of tarragon -it is an unexpected match that will surprise you!
Leftovers:
Enjoy chilled in salads, grain bowls, or pasta the next day.
Chop them into smaller pieces and add them to your omelet the next morning.
Make a quick bruschetta: toast a thick slice of crusty bread with some olive oil, add the leftover asparagus, some cherry tomatoes, and herbs, and you are good to go.
